Ingredients:

1 large onion finely chopped
2 large potatoes cubed
400 grams fresh spinach
1 teaspoon ginger
2 garlic cloves finely sliced
1 teaspoon ground cumin
1 teaspoon turmeric
1 teaspoon garam masala
olive oil
butter
salt

Method:

Add a splash of oil and a knob of butter to a pan on a medium heat.
Add the chopped onion, as it starts to lightly brown add the cumin, tumeric, garam masala, garlic and potatoes. Add 1/4 cup of cold tap water cover and gently cook until the potatoes start to soften then add the spinach and serve once the spinach has wilted.
